Posted January 14, 2019 05:54:20A new café is opening in Victoria’s south-east, and it is one that will be welcoming diners to a world away from their familiar surroundings.
Key points:The wooden corner shop has been set up in a new cafe in the CBDGeraldine and Nick, a couple who have been in the coffee industry for 10 years, are opening a new café and cafe at the same location.
They’re the first couple to open a cafe in Victoria.
Gerald and Nick have been working with cafe owner Roberta Wilson for the last five years to develop a concept that combines cafe design with a fresh coffee experience.
“I love this place and I love this cafe, so I decided to get on board,” she said.
“It’s not the first time we’ve been trying something new, and I’m really excited.”
The pair said they were inspired by the old town cafes that opened up in the late 1800s and early 1900s.
“They all had this little room, they had a little window, and that’s what we’ve got,” she explained.
“And then a little bit later we started thinking about, ‘Why don’t we make a café that’s a little different?’
And I think it’s a great way to start.”
We want to create something that is really authentic, that’s different and different, and we’ve come up with a concept, we think it works.
“They are hoping patrons will be drawn to their unique design by the small size of the space.”
The coffee will be hot and fresh,” Mr Wilson said.
He said they had been building a business with the help of the City of Richmond, but it was hard to convince businesses to give up their traditional premises.”
There’s not many places in the world where you can say, ‘If you want to open your shop in this area, we’ll put in a parking spot and you can park in the back’,” he said.”[But] it’s so difficult for people to understand the concept.
“Mr Wilson said he had spent a lot of time looking at old shops, and he had found inspiration in the old coffeehouses that he and his partner owned in the mid-1800s.”[It] was just so different, it was just amazing, it’s not like a cafe shop.
You had a whole area that was open and you could just walk in and have a cup,” he said, adding they were looking forward to opening the first cafe.
He and Mr Wilson have already spent time developing the cafe, including developing their business plan, which will allow them to expand the cafe and the business.
The café will be located in the heart of the CBD, close to a number of popular spots including the popular cafes and cafes with large outdoor terraces.
Mr Wilson and Mr Nelson said the idea was to create a place that would be accessible for people who have the desire to experience a new type of café.”
You’re going to have people coming in here, you’re going of course there’s going to be tables,” he explained.”[The] idea is, if you’re in this business, and you’re a coffee lover, we want to give you something that you can walk in here and enjoy, and be able say, it has a different atmosphere and that makes you happy, so we want people to feel that.
